Things I’m Loving – May 2015

It’s so hard to believe May is gone already! In truth, the first half of the month was a bit of a blur with final papers and exams to complete for my classes and a few papers to finish editing at my job. Once those were finished, I spent the following week just sleeping and recuperating. Since then I’ve been settling into a routine of work and play. Here are some of the things I’ve been loving in May!

Back to Bentos: Shumai Bento

It’s been a while since the last bento post. October was so busy that at some point I gave up making lunch in favor of an extra half hour of sleep. While it’s fun to grab lunch out every now and then, there are only so many lunch options convenient to campus (especially when you only have half an hour between class and work). Those options tended to be not quite so healthy and definitely more expensive. So now it’s time to get back to bentos! (more…)

Featuring the Pink Bento

That’s right, it’s bento time again! Today’s bento features my new pink bento box that’s just like the blue one from a couple of weeks ago. This particular bento was so easy to put together that it almost feels like cheating. I got a rotisserie chicken already prepared at the grocery store so all I had to do was cook up the veggies and rice, pull off small pieces of chicken (after 2 years of living in Japan, I still can’t “cut” meat with chopsticks!), and place all into the bento box. Easy, delicious and a pretty balanced meal! (more…)

Back to School Bento

Now that we’re settled into our new apartment and classes have started, it’s bento time again! The first week  my husband and I were just buying lunch on campus or heading back home where we could whip something up. But buying lunch out can be pretty expensive and I’m finding I like to stay on campus most of the day so I can study at the library and hit the gym before heading home in time for dinner. Packing a bento is the perfect way to save money and still have a delicious meal on campus. Here is a simple smoked salmon bento I made for lunch this week.

The main attraction for this one is the smoked salmon. Not only do I love the taste but since it’s ready to eat, I don’t have to fuss with a lot of preparation. You guys know I like to keep it simple! ^_~ I actually cooked the mixed veggies (carrots, broccoli, green beans, yellow wax beans, peppers) and rice the night before so it was all ready to go first thing in the morning.

And I love my new bento boxes! They are a bit smaller than my other bento boxes but it’s just the right size for me since I don’t want to eat too much before heading to the gym. Here is the blue one but I also got one in pink. The semester has just begun and there are many bento to be had before it’s over so I’m sure you’ll be seeing more of these! ^_^
